Leading the culinary program is acclaimed Colorado chef Will Nolan, whose passion for hospitality, sustainable sourcing, and bold flavors has made him one of the region's most respected chefs.

Meet Chef Will Nolan

Originally from New Orleans, Chef Will Nolan has spent decades building an impressive culinary career rooted in Southern hospitality and locally sourced ingredients.

After beginning his culinary journey at a young age, Will honed his craft everywhere from Singapore to New Orleans before serving as Executive Chef at renowned properties including the General Palmer Hotel in Durango, Auberge's Hotel Madeline in Telluride, and the Viceroy Snowmass. Most recently, he opened Little House in Telluride with MO Hospitality Group and now serves as chef-owner of BlackSalt Hospitality.

His commitment to sustainable sourcing has earned national recognition, including a nomination for Food & Wine's Best New Chef and a feature on NBC's Today.

For Society Club, Chef Will has created menus that celebrate fresh ingredients, comforting favorites, and flavors inspired by cuisines from around the world.
